This replacer is especially formulated as a substitute for instance for skimmed milk powder. It can be used for all types of bread, cakes and biscuits. It generates extra crust color and extra flavor. The dosage is 0.5 – 4% on the flour weight or 60-75% of the normal use of skimmed milk powder.

Advantages

Less product is added and it gives much better baking results so this product is more economical than skimmed milk powder. It gives extra crust colour and more flavour. There is no negative reaction on the yeast. Also this product is less expensive than normal skimmed milk powder.

This universal fat replacer is a substitute for instance for shortening. It improves the softness and freshness of all types of bread and rolls. It retards the staling process and results in softer products with a finer crumb structure.

It reduces the fat in your bread, using a low dosage of 0.25% – 1%.
